In a situation where we're not collecting users' email addresses or personal information during product sign-up, how can we arrange user interviews with loyal users?

Hi People, I am a tech founder and was thinking of developing a simple/easy-to-use client onboarding tool for small businesses/solopreneurs/freelancers. You can onboard a client using sign up form. Then the client can select tasks or upload their files, etc. After that the progress of the project and timeline can be monitored. Also has payment gateway integrated to collect invoices. (Simple workflow) Simple pricing of around 10-15$ per month. Is this something you personally would pay to use?
