@vivek_ganesan when I worked as a SF developer/consultant I found varied uptake of Opportunity among different organisations, some used them accross the board for all deals and they were a key metric in weekly sales meetings, whereas in some organisations they were only adopted by a few users to keep track of their own personal deals. The place I spent the most time working did use them as Salesforce intended.
