I've been using GraphCommerce for a new build, and have found it to have a very nice balance between customisation and sensible and useful out-of-the-box defaults. I really believe in this project and hope to see it become the obvious choice for headless Magento.
As I've said in discussions with my team and mentioned to the GC team too I have legitimately been able to achieve in hours what took me days using other M2 headless platforms.
